It’s been cold enough for soup! I love soup but my husband only likes them if it is super cold out.
I made this one and he said it was. my best yet! HA! It was yummy, hearty and healthy!
Sausage, Bean & Kale Soup
INGREDIENTS
1 lb sausage chop meat ( you can use regular, hot , chicken or turkey- your preference) I used regular pork
1 stalk celery chopped
1 1/2 onion chopped
2 carrots chopped
4 cloves garlic chopped
1/2 Potato chopped
1 bag mixed dry beans rinsed or 3 cans of red or white beans ( NOTE- dry beans will take 1.5 hours to cook vs canned taking about 30 min)
1 bunch kale chopped- (you ca use 2 bunches if you want it to have more kale!)
3 32 oz containers of Chicken Broth — I use low salt
Olive oil- 1 turn around the pan ( 1 tablespoon)
1 Tomato chopped
Parmesan Cheese to taste
Salt & Pepper to taste
Oregano 1 tsp or more to taste
1 bay leaf
INSTRUCTIONS
in a large stock pot- heat oil and add chop meat. Break it up and brown for about 2 minutes
Add all chopped vegetables , season with salt and pepper to taste and saute until soft- about 4 minutes
Add beans , tomato , oregano, bay leaf and mix together
Pour in chicken broth and bring to a boil . once boiling , reduce to simmer
If you are using canned beans – add the chopped kale once you simmer and cover and cook for about 25-30 minutes
If you are using dry beans, cook about 70 minutes and then add kale
Stir in parmesan cheese to taste in the last 5 minutes
Serve with crusty bread and enjoy!
Note- in this picture, I added a spoonful of chopped spaghetti into the soup before serving- I am Italian, it is HARD for me NOT to add pasta!
