One of the things that I love about cooking, is being creative. One thing I am not great at is having to measure and following recipes to a tee.
It is my hope to offer you some simple recipes that won’t take too much time and will allow you to be creative without a ton of ingredients or tools.
First up, Breakfast Egg Bites.
Here’s the beauty of this recipe; I make them weekly and mix them up every time. Whatever you have on hand will work as the mixers. Think of these as bite-size baked omelets. I love them.
Ingredients :
10 large eggs
1/4 cup of 2% milk
1/2 cup of low-fat shredded cheese – I love mozzarella or cheddar
Salt & Pepper
“Mixer Ideas”- I use any 2 of the below chopped up and add to eggs. About 3-4 tablespoons of each that you want to add; but don’t stress on the measuring.
Broccoli
Onions
Scallions
Asparagus
Spinach
Red/ Green Peppers
Zucchini
Tomatoes
Ham/ Bacon
How To Make :
Preheat Oven to 350
Spray 12 cupcake tray with oil and set aside
Beat eggs and add milk
Season with salt and pepper to your liking
Mix in any of the toppings you like
Spoon into the cupcake tray and bake for 25 minutes
I freeze them and eat 2 at a time.
