It has been a while since I have “cooked with you” . Life got in the way and I realized some of the simple things that brought me joy needd to come back, cooking is one.
I have been making these for my family for a few years and forgot about them. My daughter asked to bring them back, so we did and I AM SO GLAD! They are so easy and so, so good.
Being from NY, we LOVE bagels. These are chewy and a bit healthier too!
INGREDIENTS for 8 bagels
2 cups nonfat plain Greek yogurt- I use FAGE
2 cups self-rising flour or mix 2 cup all purpose flour + 3 tsp baking powder + 1 tsp table salt
TOPPINGS
1 egg for egg wash finish- whisked. you can use just the egg white if you prefer too
everything bagel seasoning – Trader Joe’s has one, I recently found one in my local supermarket too
you can use anything you like- poppy seeds, sesame seeds, salt, etc..
DIRECTIONS
Preheat oven to 350°F.
Line a baking sheet with parchment paper or silicone mat if you prefer
I have made these with and without a hand mixer. It really is a matter of preference. If you use a hand mixer, it is a little less sticky on your hands.
BOWL METHOD-In a large bowl, add yogurt and flour. The dough will be very sticky. If using hands add a sprinkle to your hands to help. Mix until formed into a ball. When I do this method, I sprinkle flour on my cleaned counter and roll and mix until smooth
HAND MIXER METHOD- Add flour and yogurt to mixer with your dough hook attachment. Mix on medium until the dough comes together in one ball. It will not take long. Don’t overmix or it can get sticky all over again
Now, cut the ball into half and then again until you have 8 four equal pieces
Roll out each ball on a lightly floured cutting board or your counter into a rope about 3/4 inch thick.
Take each rope and form into a circle, pinching ends shut to seal your circle
Place bagels onto your baking sheet.
Brush tops with egg wash.
Sprinkle tops with your seasoning of choice, my picture is the everything topping
Bake bagels for about 23-25 minutes
Take bagels out of the oven and raise heat up to 500°F. When it reaches 500, put bagels back in oven and bake 2 minutes to brown a little more
Cool a few minutes and ENJOY!!
NOTE- I have seen this recipe done a few ways and tried them all, I do not think the boiling step is necessary to have a great result, but feel free to experiment.
