I have received quite a few messages asking for more recipes, the last month of holiday planning set me back, but I am on track now!
I will be sharing recipes monthly, sometimes a mid month special too ! For this issue, I am sharing 3 recipes I made for New Year’s Eve. They are super easy and were a big hit!
I got a new crock pot for Christmas, one that allows you to sear on the stove and then cook in crock pot. It has been on my wish list for a long time. It really makes a difference, in my opinion, when you sear the meat to brown it and hold the flavor! This is the crock pot I got, in case you are interested. Great price point too!
BBQ Brisket –
This literally fell apart and the flavor was amazing! I will be making this again! I was nervous as I never made it before and created it as I went!
This recipe will serve 4-6
INGREDIENTS
- 4 lb beef brisket. Ask your butcher to cut for you.
- 1 32 oz container chicken broth
- DRY RUB – If you like. love or dislike one of the spices- feel free to adjust to your preference. ( ex- eliminate cumin if you don’t like and add extra garlic !)
- 3 tbsp brown sugar
3 tsp paprika powder
2 tsp onion powder
2 tsp garlic powder
1 tsp cumin powder
1 tsp mustard powder
1 tsp cumin
2 tsp chili powder
2 tsp salt
1 tsp black pepper - 2 tsp olive oil
- 4 cloves chopped garlic
INSTRUCTIONS
- Mix all dry rub ingredients and rub onto brisket. If time allows, let it sit 2-3 hours.
- Heat oil in crock pot and saute garlic. If you are using a crock pot that doesn’t sear, eliminate this step
- Add brisket and brown on each side. Approximately 2 min per side
- Pour chicken stock around the brisket in the crock pot, cover and cook for 8 hours . You can adjust this to more or less depending on your crock pot and your schedule. I did 8 hours when I made mine.
- You won’t even need to slice this, it will fall apart! Ladle some of the juice from the pot over the brisket and serve on a platter
I made a home made BBQ sauce which I am including below, but, you can serve with your favorite sauce. We served it with slider rolls and horseradish sauce!
Homemade BBQ Sauce
- 1 cup catsup
- 1 cup cherry cola
- 1/2 cup brown sugar
- 1/4 cup apple cider vinegar or red wine vinegar if you prefer
- 2 Tablespoons honey
- 1 tsp garlic powder
- 3 tsp Worcestershire sauce
- Salt and pepper to taste
Mix all ingredients in a sauce pan and cook on low heat for about 15 minutes. Store in jar in fridge, IF you have any left! 🙂
Bacon Crackers
These were super easy and such a big hit!
Ingredients
- Parmesan Cheese
- Club crackers
- Bacon – I used pork bacon, but if you prefer turkey, I am sure it would be fine
Instructions
- Preheat oven to 350 degrees
- Line a cookie sheet with parchment paper and place the crackers on the sheet. I love these pre cut sheets
- Sprinkle parmesan cheese lightly over the crackers
- Cut the package of bacon in half
- Wrap each cracker with a half of a piece of bacon and place back on cookie sheet. I put the seam side down to keep in place
- Sprinkle a little more cheese on top
- Bake in oven for 50 minutes
I served with ranch dressing on the side. You could try any dressing, or dipping sauce you like – although none are needed!
Don’t expect any leftovers!
Ricotta Honey Dip
This is super easy and delicious spread for crackers , bread or veggies!
Ingredients
- 1 15 oz container ricotta
- 2-3 tablespoons honey
- 1-2 tsp finely chopped thyme. You can use any herb you love, basil, parsley all would be fine
- salt and pepper to taste
Mix all together and serve with your choice of side. This can stay in fridge for a few days, if you have any left!
