I am not a baker, baking is much more precise than my creativity really understands, but… we do love sweets. I have mastered the ones that are may favorites! Banana Bread is one of them. Later this month , I will share my favorite side for Thanksgiving and Cookie Recipes that we make for Christmas.
This banana bread is a combination of a few trials using the ingredients I adore the most in my bread. Vanilla, Cinnamon, Sour Cream and Chocolate Chips!
I have made this using a loaf pan, mini loaf pans and muffins. It has been fine for all of them, just adjusting the time a little
Here’s the other problem, I have made 4 of them in the last few weeks and NEVER got a picture for you, beacause we ate it all too fast!
I feel confident that if you love bananas and bread, you will enjoy this.
Banana Bread
Ingredients
2 cups flour
1 teaspoon baking soda
1/2 teaspoon salt
1 cup brown sugar
2 large eggs
1/3 cup oil – vegetable or canola
6 tablespoons sour cream ( I use light sour cream)
1 teaspoon cinnamon
1/2 teaspoon vanilla
3 mashed bananas
3/4 cup chocolate chips – optional
1/2 cup chopped nuts- optional
dusting of confectionery sugar once cooled
Directions
Preheat oven to 350 degrees
spray the pan you are planning on using with a nonstick spray
In a large bowl, whisk together dry ingredients- flour, baking soda, cinnamon and salt- set to the side
In another bowl , whisk oil and sugar, then add eggs, vanilla and sour cream – do not overmix, just stir until combined
Add in the mashed bananas and the dry ingredients and fold together using a rubber spatula. If you are adding chips or nuts, add them too. You are done folding it when you no longer see any remains of the white flour streaks
Pour ingredients into baking pan and bake for 50- 55 minutes for a loaf. For muffins – 22 minutes.
Everyone’s oven works differently, so check it with a butter knife or toothpick to be sure it is done.
After allowing it to cool a little but, I place it on a plate and sprinkle with confectionery sugar
