March has finally arrived and, after a cold and dreary winter, we’re probably all getting a little antsy for the warmth of spring, an increase in hours of daylight and, of course, spring produce! We love our root veggies and greens here at RelayFoods.com, but we’re more than happy for the transition to the lighter fare of spring. We know how important it is to find a fun way to help your kids enjoy all of the wonderful seasonal produce nature has to offer, so our in-house Registered Dietitians has carefully curated tasty seasonal recipes for the whole family to enjoy!
Here’s a quick guide to some of the delicious vegetables that are available in March:
Arugula – Also called Rocket, this salad green is known for being aromatic and peppery. Although it’s often used as a base for fresh salads, it’s also great paired with cheeses, on sandwiches, or tossed into pasta and egg dishes. It’s incredibly healthy with about eight times the calcium, five times the vitamin A, vitamin C and vitamin K, and four times the iron of iceberg lettuce. Arugula pairs great with strawberries, which will be in season soon—get ready to make Strawberry and Arugula Salad!
Carrots – Although carrots tend to be available year-round, they are perfectly sweet and crisp this time of year, making it a great time to move from roasting or steaming to eating them raw as a snack or in fresh salads. Looking for a fun recipe to make with the kids? Try Carrot Cake Pancakes!
Crimini and Portabella Mushrooms – Similar to button mushrooms, criminis have a fuller flavor and darker color. When crimini mushrooms mature, they are called portobello mushrooms, which is why criminis are sometimes called “baby bellas.” These mushrooms are great as a meat substitute and as an addition to casseroles. Mushroom Bacon Risotto is a dish that never disappoints!
Radishes – Radishes are crisp, pungent and peppery root veggies with edible leaves. They’re a great source of vitamin C and bring a nice pop of color to spring dishes. Looking for a new way to use radishes? Give this easy Russian Radish Cucumber Salad a try!
